Raw Chocolate with Almond Butter and Goji Berry Centre

When I feel like making raw chocolate I love making these – they are like little cupcakes of goodness with a sweet little surprise in the middle!  Hope you enjoy.  This recipe makes about 12-15 chocolate cups!

P.s If you want to make these for kids I recommend carob. Cacao is too much of a stimulant for little ones!

Ingredients:

Chocolate…

  • 1/2 cup of coconut oil – melted
  • 3 Tablespoons of coconut butter – melted
  • 3⁄4 cup of raw cacao powder
  • 1 Tablespoon of mesquite powder
  • 1/3 cup sweetener – you can choose raw honey, coconut nectar, or agave ( I personally prefer choosing one that order)
  • A pinch of sea salt

Almond butter filling:

  • 1/2 cup of  almond butter
  • 1 Tablespoons of sweetner you can choose raw honey, coconut nectar, or agave ( I personally prefer choosing one that order)
  • 1 Tablespoon of mesquite powder
  • 12- 15 goji berries soaked

Method

Method for chocolate…

  • In a double boiler melt coconut oil and coconut butter.
  • Add sweetener and stir in cacao, mesquite and add sea salt until combined and smooth.
  • Poor into cupcakes chocolate a quarter of the way.  Place in the freezer until set.
  • You should still have lots of chocolate mixture to fill the remaining cupcakes.

Method for nut butter filling…

  • Combine all the ingredients as above for the nut filing into a blender ( we use the Optimum Blender)  until mixed.

  • Spoon into small balls and place on the centre of the chocolates and put a little goji berry in the middle. And then pour remaining chocolate mixture of the top. Place into the freezer to set and enjoy xxx
