Mini Orange and Passionfruit Raw Cheesecakes
Raw Orange and Passionfuit mini cheesecakes! I just had some friends over this morning and whipped up these little mini raw cheesecakes using muffin cases! Perfect guilt free and yummy finger food!
Orange and Passionfruit Cup cake cheese cakes! * We sell all the ingredients to make these yummy treats over at The Raw Food Store too smile emoticon
- 2 cups of walnuts
- 3/4 cup of dates
- 3/4 cup of shredded coconut
- 2 1/2 cups of soaked cashews (soak overnight)
- 1/2 cup of coconut nectar
- 1/2 cup of freshly squeezed orange juice
- The pulp of 2 passion fruit
- 1/2 cup of water
- 1/2 cup of coconut oil
Base: Process walnuts, dates and coconut – press into cup cake moulds! I lightly coated the muffin trays with coconut oil so they would come out easily once frozen
Filling; place all filling ingredients into a high speed blender (we use and love our optimum) until smooth!
Poor filling mixture over base and place in freezer to set!
The one thing I love about making cheese cakes using muffin cases is that they only take a few hours to set!
