Raw Apple and Goji Berry Bars

Kids love Muesli Bars! So I thought I would come up with a RAW version. Issy absolutely loved them, they were just soft enough for her to able to chew them and I was happy as they were full of raw goodness for her.

However there is not just one child in this house there are three kids in this house one is 16 months the other two are 36 years and 41 years old… and well the other two older kids got stuck into them he he he….  like most raw food in this house these did not last long!

Ingredients

  • 200 grams of Buckwheat (sprouted if you can, or soak for a good hour)
  • 50g Mesquite powder
  • 2 Organic apples chopped into tiny squares
  • 1 cup of Goji Berries (soaked)
  • 50 grams of ground flax seeds
  • 1/2 teaspoons of Vanilla extract
  • pinch of salt

Method

In a high speed blender place the Buckwheat and blend until a paste.

Place all the ingredients in a mixing bowl and mix away. You may need to add a little water, but it should be a rather dough consistency.

Roll out dough on dehydrator sheets until you form a square. Cut into Bar shapes.

Dehydrate at 115c for about 4-5 hours. Then split the bars where the cut marks are and turn the bars over and dehydrate for a further 3-4 hours.
